ATOMIC LEVEL OF FLAVOUR INSIDE
ORIGINAL SCHNITZEL COATING
The Head Rooster reckons the secret to a great schnitty was never the meat, it's all about the crumb. His turns out shatteringly crisp and golden on chicken, beef, pork, veal or fish, and it's dead easy to nail. Coat it, cook it, watch the family come running.
THE ATOMIC CHICKEN SCHNITTY
INGREDIENTS:
- 2 large skinless chicken breasts (makes 4 schnitzels) - Pork and veal are also a great alternative.
- 1/2 a pack (225 grams) of Atomic Chicken Schnitzel Coating
- 2 large eggs
- Oil for frying - Sunflower, Canola or Peanut oil
- Fresh lemon wedges - for garnish
THE BORING BIT
Trim chicken breasts of unwanted skin or fat and remove the tenderloin if attached. The tenderloins can also be used to make mini schnitty bites or sliders in the same way as the breasts.
Carefully slice the breasts horizontally in half equally so you have 2 thin breast pieces, and then place side by side in between plastic wrap and gently pound with a meat tenderiser, rolling pin or heavy based saucepan to achieve a uniform thickness. You should now have 4 breast pieces of fairly equal size and thickness.
Place the chicken breasts on a plate and setup 2 shallow bowls, the first containing the 2 eggs beaten, and the second with the Atomic Chicken Schnitzel Coating.
THE FUN BIT
While your oil is heating in a pan deep enough for frying, one by one dip each breast into the beaten egg mix and then cover chicken well with the coating, pressing it in with your hands for a nice thick layer. For best results heat and keep the oil temp at 175c-180c. Also, if you like a thicker coating, then first coat the breast with plain flour before the beaten egg dip.
Fry in batches until golden brown and cooked, place on a wire rack or paper towel to drain off excess oil then serve up mouth-watering Atomic Chicken Schnittys or Schnitty Burgers for everyone to enjoy. Don’t overcrowd your frying pan. 1 to 2 pieces at a time for best results.
